I call this “On the Verge” broth. You make it when you’re on the verge of being sick and it (I’d like to believe) helps stave off whatever illness is trying to creep on you.
Just combine a cup or two of chicken broth, a big spoonful of curry paste (spicy is best if you can handle it!), and about half a cup of coconut milk. Get it nice and hot. Add stuff like veggies or protein if you’re feeling ambitious, but when you’re on the verge of being sick, you’ll probably just want to eat it as is. Spicy, creamy, and delish… for those times when grandma’s not around to make you chicken soup!
